Easy Chicken & Veggie Bowl
Ingredients
- 1 cup cooked brown rice
- 1 cooked chicken breast (shredded or chopped)
- 1 cup mixed vegetables (broccoli, carrots, or frozen veggies)
- 1 tbsp olive oil
- 1 tsp garlic powder
- Salt & pepper to taste
- Optional: soy sauce, teriyaki sauce, or lemon juice
Directions
- Cook the rice according to package instructions.
- Heat a pan over medium heat and add olive oil.
- Add vegetables and cook for 3-5 minutes until soft
- Add the cooked chicken to the pan and season with garlic powder, salt, and pepper.
- Stir everything together until warm.
- Put the rice in a bowl and top with the chicken and vegetables.
- Add soy sauce or lemon juice if you want extra flavor.
Berry Yogurt Parfait
Ingredients
- 1 cup Greek yogurt
- ½ cup strawberries or blueberries
- ¼ cup granola
- 1-2 tsp honey
- Optional: chia seeds or nuts
Directions
- Add a few spoonfuls of yogurt to the bottom of a cup or bowl.
- Add a small layer of berries.
- Add another layer of yogurt.
- Sprinkle granola on top.
- Drizzle with honey.
- Add extra berries or chia seeds if you want more texture.
Veggie Wrap with Hummus
Ingredients
- 1 whole-wheat tortilla
- 2 tbsp hummus
- ½ cup spinach or lettuce
- ¼ cup shredded carrots
- ¼ cup sliced cucumbers
- ¼ cup sliced bell peppers
- Optional: turkey slices, feta cheese, or avocado
Directions
- Lay the tortilla flat on a plate.
- Spread a thin layer of hummus across the tortilla.
- Add the spinach or lettuce.
- Add carrots, cucumbers, and bell peppers.
- Add optional extras like turkey or avocado.
- Roll the tortilla tightly into a wrap.
- Slice in half and serve.
