Easy Chicken & Veggie Bowl

Ingredients

  • 1 cup cooked brown rice
  • 1 cooked chicken breast (shredded or chopped)
  • 1 cup mixed vegetables (broccoli, carrots, or frozen veggies)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Optional: soy sauce, teriyaki sauce, or lemon juice

Directions

  1. Cook the rice according to package instructions.
  2. Heat a pan over medium heat and add olive oil.
  3. Add vegetables and cook for 3-5 minutes until soft
  4. Add the cooked chicken to the pan and season with garlic powder, salt, and pepper.
  5. Stir everything together until warm.
  6. Put the rice in a bowl and top with the chicken and vegetables.
  7. Add soy sauce or lemon juice if you want extra flavor.

Berry Yogurt Parfait

Ingredients

  • 1 cup Greek yogurt
  • ½ cup strawberries or blueberries
  • ¼ cup granola
  • 1-2 tsp honey
  • Optional: chia seeds or nuts

Directions

  1. Add a few spoonfuls of yogurt to the bottom of a cup or bowl.
  2. Add a small layer of berries.
  3. Add another layer of yogurt.
  4. Sprinkle granola on top.
  5. Drizzle with honey.
  6. Add extra berries or chia seeds if you want more texture.

Veggie Wrap with Hummus

Ingredients

  • 1 whole-wheat tortilla
  • 2 tbsp hummus
  • ½ cup spinach or lettuce
  • ¼ cup shredded carrots
  • ¼ cup sliced cucumbers
  • ¼ cup sliced bell peppers
  • Optional: turkey slices, feta cheese, or avocado

Directions

  1. Lay the tortilla flat on a plate.
  2. Spread a thin layer of hummus across the tortilla.
  3. Add the spinach or lettuce.
  4. Add carrots, cucumbers, and bell peppers.
  5. Add optional extras like turkey or avocado.
  6. Roll the tortilla tightly into a wrap.
  7. Slice in half and serve.
